I'm thinking about setting up one of these babies. Any suggestions? bad/good experiences?

It should be a VERY secure Redhat based SME server, extremely easy to setup, with only the most necessary services running by default, and no software installed as basic. configuration is entirely web based with a really cool web userinterface for administration. The server itself is textbased. You could be up and running in less than 25 min from scratch completely configured and ready to serve!

Easy to set up, but impossible to get REAL console access(other than SSH)

Check out SmoothWall (http://www.smoothwall.org) before you decide on a firewall/router :)
