Can anyone tell me how to re-run the xconfiguration utility you get during install?

An impossible question to answer since you don't tell us which distro/version you have installed.

However, running 'Xconfigurator' as root on Mandrake and RedHat(?) should work.

Yes, I appoligize for not stating which version. Redhat 7.3 to be exact. Now, can you tell me how to change the default mode, from GUI to Command line, from the command line?

Edit your /etc/inittab file, and set default runlevel from 5 to 3 (I use Mandrake, but they both use the same layout for runlevels).

# Default runlevel. The runlevels used by RHS are:
# 0 - halt (Do NOT set initdefault to this)
# 1 - Single user mode
# 2 - Multiuser, without NFS (The same as 3, if you do not have networking)
# 3 - Full multiuser mode
# 4 - unused
# 5 - X11
# 6 - reboot (Do NOT set initdefault to this)
