Head on over to http://www.nvidia.com/view.asp?IO=linux_display_ia32_1.0-4191 for the latest nVidia drivers, that will work with that game. Also read all the way through their README file (well... maybe not all the way, but at least far enough so that you understand how to figure out both which files to download, how to get them installed, and what changes you have to make to your XFree86 configuration file -- oh, and what that file is as well).

I recommend running the NVchooser.sh script that's linked off that download page. Save it to your home directory, open a terminal, and sh NVchooser.sh to run it. Then download the files it tells you to, and reread through the README to find out how to install them.

If it recommends files ending in .src.rpm, then you will also have to install your distro's kernel source package.

Oh, "distro" is short for "distribution". It's the particular flavor of Linux that you run -- examples are RedHat, Mandrake, Debian, Gentoo, Slackware, and others. The distro's version would also be important here (e.g. Mandrake 9.0, RedHat 7.3, whatever).

There's a ton of discussion on installing the Nvidia drivers - here and on www.nvnews.net

here's a simple explanation for the 3123 drivers in RH - I haven't installed the new ones yet, so I don't know if anything different is required, but this will get you started:
http://www.linuxiso.org/forums/viewtopic.php?t=1959

once they are set, just do what theGimp said. Also make sure you do the same for the 2 point releases (1080b and 1080c) to get the demo up to the current version.

all the files are here:
http://www.3dgamers.com/games/unrealtourn2/

btw: the game is awesome...

Just ran Loki Update to get Rune updated (I was seeing a couple of bugs, don't know if anyone actually keeps patches going on the Linux port for Rune, but it's worth a shot anyway) and noticed that the UT2k3 demo has an entry in there as well. Once you get the demo installed, just (as root) run loki_update and follow the prompts to get the demo updated to the latest version.

That something I will try, but i'll just downlaod the patch.

I believe the demo is bundled with loki_update under update/ or updater/ in the UT2003_demo directory
