Any one know of any way to get console emulators to work in linux? Or are there any console emulators for linux?

I'm using SNES9x as an emulator for my (guess what?!) SNES and it works really fine. There are also Game Boy emulators and a lot of other stuff, just search for it on freshmeat.

xmame and xmess will go fullscreen in console with svgalib.
