You didn't mention whether you're shopping for IDE or SCSI. I'll assume you're doing IDE. I'm not very well read-up on SCSI lately.
I personally will usually only buy from the IBM Deskstar line. They're really, really nice. The Quantum Fireball line is good, too. But look at the stats, though: make absolutely certain you get a 7200RPM drive, get the lowest latency and largest cache you can find, and you should probably get an ATA/100 capable drive even if you don't currently have an ATA/100 controller. You may have one someday.

Maxtor/Quantum: I like the best
WD Caviar: I like it second best
Seagate: I've had 2 head crashes! argh! But they're under warantee...Just kinda frustrating reinstalling everything. hee hee

I've used Seagate almost exclusively for the past 6-7 years (mostly SCSI) never had a problem and performance is.. well.. *wrooooooom* sums it up pretty good I suppose :)

I have a 40G IBM 60GXP and a 30G Maxtor DiamondMax Plus. Both are 7200 rpm ata100 drives. The IBM is just a tad faster in hdparm tests. The Maxtor is almost a year old and has been a great drive for me too, plus I got a realy sweet deal on it. :D
Check out http://www.storagereview.com. I believe the 60GXP is still their recommended drive.

I haven't checked up on it lately, but the last I checked, IBM was the only company to come out with a SCSI 320 HDD. I think they've also come out with SCSI drives bigger than 18 GB that are 15,000 RPM too.

IDE...the choice should be IBM. Seagate and Maxtor have not been bad for me either, but spend the few extra bucks for IBM.
SCSI....All my scuzzy friends love Seagate.

Don't buy Western Digital. I sent away my defective HD on Sept 19 for replacement under warranty. I STILL don't have it back. All they had to do was send a replacement. WORST SERVICE EVER!!!!
They keep on promising they will send it out on day X and then when I call back on day X they haven't sent it.

Another vote for IBM deskstar IDE. I bought a 40 gig, 7200 rpm one, and it really is cracking.

IBM is cool but a little premium.
Western digital is pretty cool but they
use a different setting for master and
single on IDE which can lead to some more
rejumpering. Their included software is somewhat useful (restoring old track 0's and such) but is brand specific.
Maxtor (plextor?)is alot like WD (minus the jumpering I think), but their included
software is much nicer and not brand
specific. I'm not sure I would ever have
multi-booted when I was starting out if
I didn't have a copy of it to create the
windows partitions.

I have had good luck out of their later drives. 1. A 13.6 GB 5400rpm drive. 13.6AARTL. Decent performance but not great. My Linux partitons sit on this except /home which sits on...
2. A 60 GB 7200rpm drive. WD 60BBRTL. Much faster than the older drive above and costs less than the IBM 60GXP series (but lower performing).
So far, no trouble out of either drive.
As others have said, for top performance, go with the IBM 60GXP series.
For high performance with some value thrown in, go with the WD 7200 rpm drives.
I have no experience with the Quantum fireballs but I have an old Bigfoot and its extremely slow (and some are prone to head crashes!)
I've had ok luck with Maxtors. Three years ago I bought a 5.7 GB 5400 rpm drive. Noisy but much faster than the Quantum drive that came with my older computer.
No experience with Seagate, Fujitsu, or Samsung drives.
