Can you suggest me the best repositories to choose among the Debian ones, and, also, the better (safer) way to update my Debian based OS?
(The only things I am interested in, are security updates and bug fixed packages, and not having the very last version of a software,).
I am asking that, as, in spite of using the suggested repositories and the suggested way of updating packages, after the last update, my graphics acceleration was lost and it was useless, even reconfiguring x-server and re-installing the video card driver.

stick to the official repositories for you release branch stable/testing/unstable if your not sure what the branches mean it is explained in the debian guide on their website

the reason you lost you video drivers is it updated your kernel tree, you need to grab the lastest headers for your new kernel (apt-get install kernel-headers-`uname -r`) and compile your video drivers against that

How can I compile my video driver according to the new kernel header?
Is it not enough to install my driver again?
As a beginner I'm a little confused about that.
Can you explain me the right procedure?
Does it depend on the kind of kernel? My distro is SimplyMEPIS-3.3.1-1 (Debian based) and it should have a modular kernel.
