Do a minimal install of sarge and update your /etc/apt/sources.list. Next do aptitude update and aptitude dist-upgrade.

i try slackware = a little bloated
what?
Dont really understand your definition of bloated.
Slackware -
can be as compact as you like
You can use swaret or slapt-get to keep it up to date
Gnome 2.10.2 is available from freerock gnome or dropline gnome
The only thing that may seem to meet all your requirements may be gentoo, as you can customize the install even farther.

When you put in the ubuntu install disk type server and hit enter instead of just hitting enter. This will install the 'base' meta package. After that install the apps you want with aptitude.
BTW, you still have not said what packages you want to install in ubuntu.
