need help with mail server !

Hey there,
i have had a bear of a time trying to get an smtp and pop server to work here
i downloaded and installed Xampp and it works great. i am acting as a virtual host now hosting three websites, but i want to add a pop and smtp server for these also,
what is the easiest way to do this ?
sendmail, postfx, qmail ?
are there any gui tools or scripts to help with this setup ?
i use vector linux 4.3 by the way
any suggestions ?

I use Exim and courier-imap on my debian server with no issues...
