How about Flight Gear (http://www.flightgear.org/)? I haven't tried it, so I don't know how good it is, though...

I am looking for this because the only family computer with a joystick port on it is also the one I'd like to nuke for Linux but my brother wants to continue to shoot down planes spaceships, etc.

hmm if your looking for action try GL-117 http://home.t-online.de/home/primetime./gl-117/ , Flight Gear is nice too but it's a sim rather than an actual game

I haven't played it but I read about it:
Terminus (http://www.vvisions.com/terminus/support_frame.htm)
Linux Central (http://linuxcentral.com/catalog/index.php3?prod_code=S000-221&id=C1CZkVhjZ1ACf) apparently has it in stock.

It looks like you may be able to get one of these working under winex/cedega. They're not officially supported, but it looks like other people have them working to some extent. You can even get the CVS version for free to try it out if you want. That's how I got Planescape: Torment (sweet RPG) working under Linux. Once the LAN gaming picks up again on campus I'll probably pay for the full version too.
