I am helping out a local elementary school with their computer lab.. I have already set up a Linux server that is primarily and Samba PDC file server and handles the DNS. The workstations - about 30 of them are Pentiums 1 running Windows 95/98, 64 mb of memory or less, 2 GB hard drives...no cd drives

The linux server is a new server.....and it was needed. However, the teachers are now expecting everything to be working flawlessly because of "the new server", but the truth is that some programs still crash all 30 computers because because the computers blow. Most of the lab is setup with programs running off the server - so an app executable will be on the server with 30 workstations pointing to it....so you can see why they all crash at once with some programs...

I think it would be neat to see a workstation have linux installed and try and port (wine and DosBox) programs or install any native linux programs -

I need:

math , typing, spelling, reading, a few games that incorpotate learning these subjects.... you get the idea.

What I would appreciate is suggestions on programs, past experiences, ideas that might make this come a reality.

Sounds like you almost want to use some form of terminal services, where the apps can run off the server instead of the clients. Take a look at this:

A few packages I found with apt on debian that might be of interest: junior-math, junior-typing, mathwar

I think theres one called tux typing or something similiar
