I am downloading the latest ISOs of Debian and I see there is 7 ISO files for it...are all 7 needed or can you just use the first ISO and build a boot disc from it and get the base OS installed and then use apt-get to update the rest?
There are many ways to install debian and everyone has their own ideal way. The way I do it is like this...
On some systems I only use cd 1, and I install debian and immediatly upgrade to unstable (some people prefer testing..). On other systems I boot from cd 5 (it has an updated kernel on it) and then cd1 is still required and again I immediatly upgrade to unstable.
Unless you are running a server you will be disapointed at running debian stable, it is very out of date when compared to other popular distros. Don't let the name testing and unstable discourge you from trying it, they are both very stable and more importantly for me very up to date.
Lastly you should have searced before you asked this question, it has come up both in this forum many times as well as being all over goole. Searching will save you a lot of time, questions and people telling you to search.
cd1 is all you need. But make sure you boot with bf24 to get a 2.4 kernel. otherwise you will get a 2.2 kernel. By all means update to unstable. I've found that it works great and is very stable.
Another option to install Debian is to get a Knoppix cd and install it to your hard drive. You will have a bleeding edge Linux distro. Very easy to install. If you have any questions about the Knoppix install just post back.

Just get the first cd and apt-get the rest...
