Cheers all... I have fired up Linux again, and am trying to settle myself in. This included an upgrade from mozilla 1.3 to 1.4. Now, my fonts in the dialogue boxes from mozilla are TINY. I mean I can bearly read them. And the fonts in the menus are very "skinny"... they seem to have changed without my trying to change them... what can I do to change those fonts to my preferences?

Follow this in the application menus:
Edit => Preferences => Appearance => Fonts
Then change things to suit your preference.

:) yeah I tried that, but it doesn't seem to change my menu fonts? Umm... maybe I need to play around with it some more? Now do I need to restart Mozilla for those to take effect?

the mozilla menu fonts are controlled by your Gtk (Gnome) settings.

Which brings me to my next question... :) where do I access the GTK settings? I've never really used gnome... and I can't seem to find it in my config menus?

It's usually in Applications=>Desktop Preferences=Fonts.
This is in the "Foot" menu (or "Applications", if you have the text panel that says "Applications" and "Actions").
