Locking the desktop is a screen saver option, not sure if it's available in that version of Gnome but probly is.
There should be some kind of desktop switcher. Otherwise there is a command I don't remember.
In RH9 there is a text/graphical command:
switchdesk [desktop name]

The screen saver options should be located in the gnome control center, if you search the screensaver section there should be an option that says require password to unlock screensaver or something to that effect. you will have to forgive me I run kde as my primary DE.
& as far as switching your desktop. just like madcompnerd said you can use the switch desktop command from a shell prompt check this link for help with that http://www.redhat.com/docs/manuals/linux/RHL-7.2-Manual/getting-started-guide/s1-kde60-switchdesk.html
