"File Types and Programs" - Where are settings stored?

Ok, so I'm using RH8 with Gnome. I right-clicked and selected to, 'open with' gedit, one of my desktop launchers. I can't remember what I wanted to copy/edit..

But anyway, everytime i try to use one of the launchers now, it's just opened by gedit. I looked in the menu and founf the 'file types and programs' setting. Gedit is no longer listed there.

I just wondered where the information created by that applet is actually stored, then perhaps I could just remove and reference to gedit with relation to my dektop launchers? :)
